Le Cordon Bleu Malaysia Hosts Professor Hervé This For A Special Molecular Gastronomy Lecture

Sunway Le Cordon Bleu recently celebrated Le Cordon Bleu’s 130th anniversary with a special instalment of the Sir Jeffrey Cheah Distinguished Speaker Series. The event featured a special – and entertaining – lecture by Professor Hervé This, a world-renowned physical chemist and the co-creator of molecular gastronomy.

Le Cordon Bleu Malaysia Hosts The Co-Creator of Molecular Gastronomy

Held on 12 November 2025 at Sunway University under the Jeffrey Cheah Distinguished Speakers Series, the session focused on “Molecular and Physical Gastronomy: Key to Culinary Innovation.” Professor This shared how science plays an important role in cooking, flavour development, and modern food creativity.

He highlighted how knowledge and technique go hand-in-hand in the kitchen. One of his key messages was, “The word artificial has the word ‘art’ in it… it means the art of human beings.”

He also reminded attendees that craft grows through consistent practice, stating, “You are what you do.”

The event also saw Professor Herve This join Tan Sri Sir Dr. Jeffrey Cheah, Prof. Dato’ Elizabeth Lee, Mr. Charles Cointreau of Le Cordon Bleu, and other VIP attendees in cutting a celebratory cake marking the institution’s 130th anniversary.

After, guests and VIPs alike were treated to a sampling of culinary creativity from Le Cordon Bleu students and alumni.

A Three-Day Series On Food, Science & Innovation

The talk marked the final event in a three-day programme organised by Sunway Le Cordon Bleu and its partners:

10 November – Petrosains: A public session on how taste and sensory science influence the future of food. Students from Lycée Français de Kuala Lumpur also took part.

11 November (Morning) – Sunway Le Cordon Bleu: An exclusive demonstration for industry chefs and Le Cordon Bleu alumni on emerging trends in culinary art.

11 November (Evening) – Alliance Française KL: A session for the French community covering the science behind taste and culinary innovation.

12 November (Morning) – Flavour Experimental Workshops from Kids from Lycée Français de Kuala Lumpur

The series aimed to encourage curiosity, spark new ideas, and create a space where food, science, and culture come together.
