The best part for making this fried chicken skin comes from chicken breasts and thighs. The skin from these cuts are easier to remove in one piece and can be laid out flat on a baking sheet. Recipe 1: Oven-Fried Healthy Chicken Skin

Ingredients

  • 8 Pieces of raw chicken skin
  • Salt and pepper to taste
  • A dash of cayenne pepper (optional)

  1. Remove the chicken skin from the thighs or chicken breasts. Trim any large pieces of fat from the edges with a knife. Scrape away any extra fat or skin on the underside of the skin.
  2. Dry the skins completely on paper towels and stretch out onto the parchment paper in a single layer.
  3. Season lightly with salt and pepper. Go easy as the chicken skin will shrink as it cooks, concentrating the seasoning. 
  4. Bake for 20 minutes or until golden brown and crisp. Remove from the pan and drain excess fat on paper towels.
  5. Cool completely and store in an airtight container in the fridge. Place on a sheet pan in a 350 F oven for several minutes to re-crisp if needed.

Ingredients

  • 8 pieces chicken skin cut into desired serving pieces
  • 2 pcs calamansi, extract the juice
  • 1 Egg
  • 1/2 tsp Garlic powder
  • 50 g Flour
  • 50 g Cornstarch
  • 1 tsp Garlic powder
  • 1/2 tsp Chicken stock powder
  • Salt and pepper to taste
  • A dash of cayenne pepper (optional)

  1. In a large bowl, combine chicken skin, calamansi juice, cayenne pepper, salt and pepper. Mix thoroughly and let it sit for 15 minutes.
  2. After 15 minutes, add in egg and garlic powder and mix until evenly distributed.
  3. In a food container, put all the dry ingredients (flour, corn starch, chicken stock powder, garlic powder, pepper, and salt) together with the chicken skin then close the plastic bag and shake until the skin is coated evenly. 
  4. In a fry pan, heat about an inch of cooking oil until hot enough for frying. Fry the chicken skin until golden brown and crispy.
  5. Remove from the pan and drain in a plate lined with paper towels to drain excess oil.
