1. Easy Spaghetti Bolognese

Total Time: 1 – 1.5 hours
Yield: 4 servings

Ingredients: 2 tbsp olive oil, 400g minced beef, 1 diced onion, 2 cloves garlic (chopped), 100g carrot (grated), 2 x 400g tin chopped tomatoes, 400ml (made from stock cube. Ideally beef, but any will do), 400g spaghetti, salt and pepper.

Directions:

  1. Heat large saucepan over medium heat.
  2. Add 1 tbsp olive oil and once hot add minced beef. Add a pinch of salt & pepper.
  3. Once meat is browned, set aside in a bowl.
  4. Add 1 tbsp of oil to same saucepan on medium heat.
  5. Add onions and a pinch of salt. Fry for 5-6 mins.
  6. Add garlic and cook for 2 mins.
  7. Add grated carrot then pour the minced beef back into saucepan.
  8. Add tomatoes and stir well.
  9. Pour in stock and bring to simmer. Then reduce temperature to simmer for 45minutes until sauce is thick and rich.
  10. Add salt and pepper to taste.
  11. Cook spaghetti in large pot of salted water.
  12. Once cooked, drain pasta water and mix with bolognese sauce.

2. Homemade Mac And Cheese

Total Time: 15 minutes
Yield: 8 Servings

Ingredients: 8 oz elbow macaroni, 2 tbsp butter, 2 tbsp all-purpose flour, 1/2 tsp sea salt, 1/4 tsp garlic powder, 1 cup whole milk, 1/4 cup sour cream (or Greek yogurt), 2 cups shredded cheddar cheese.

Directions:

  1. Cook elbow macaroni in salted water. Drain and set aside.
  2. In a bowl, mix flour, sea salt and garlic powder.
  3. Heat a medium saucepan over medium heat, melt butter.
  4. Add flour mixture and mix together.
  5. Add 1 cup milk and whisk until smooth.
  6. Add sour cream and whisk until smooth.
  7. Cook on medium-high heat until mixture for 3-5 minutes (until thickened). Do not let it boil!
  8. Once thickened, reduce heat to low and add cheese. Whisk until mixture is smooth.
  9. Add salt to taste.
  10. Add cooked pasta to pot of cheese sauce and stir until evenly distributed.
  11. Cool for 3-5 minutes and serve!

3. Homemade Pasta Marinara

Yield: 3 to 4 servings

Ingredients: 28 ounce can crushed roasted tomatoes, 2 tbsp olive oil, 1 tbsp balsamic vinegar, 2 tsp garlic powder, 1 tsp dried oregano, 1 tsp kosher salt (or regular salt), 8 basil leaves, 2 cups baby spinach (optional), Parmesan cheese, 8 ounces spaghetti pasta

  1. Boil large pot of salted water.
  2. Boil pasta until al dente. Then drain.
  3. Meanwhile, in a large saucepan, place crushed tomatoes, olive oil, balsamic vinegar, garlic powder, oregano, kosher salt, basil leaves, spinach. Bring to a simmer, then cover and simmer 15 mins.
  4. Pour marinara sauce of pasta.
  5. Garnish with chopped basil and Parmesan cheese!

4. Pasta al Limone (Creamy Lemon Sauce)

Yields: 4 servings

Ingredients: 1 lemon, 12 oz spaghetti, Kosher salt (or regular salt), 3/4 cup heavy cream, 6 tbsp unsalted butter, 3/4 cup grated Parmesan, black pepper.

Directions:

  1. Grate lemon zest into a large pot.
  2. In a bowl, cut lemon in half and squeeze out juice to yield 2 tbsp.
  3. Cook pasta in another large pot of heavily salted water until al dente.
  4. Meanwhile, add cream to pot with lemon zest and cook over medium heat. Whisk until liquid begins to simmer (2 minutes).
  5. Reduce heat to medium-low.
  6. Whisk in butter, 1 tbsp at a time until melted and sauce is creamy. Remove from heat.
  7. Before pasta is cooked, scoop out 1 1/2 cup pasta water.
  8. Add 3/4 cup pasta cooking water to cream sauce and return to medium heat.
  9. Directly from spaghetti pot, use tongs to transfer spaghetti to sauce pot.
  10. Cook and toss often, adding Parmesan little by little, until cheese is melted and sauce is creamy (3 mins).
  11. If sauce looks tight, add some pasta water.
  12. Stir in reserved lemon juice and season with salt if needed.
  13. Season with pepper and serve!

5. Spicy Tomato Cream Pasta

Total Time: 15 minutes
Yields: 4 servings

Ingredients: 1 tbsp olive oil, 1 small onion (diced), 2 minced garlic cloves, 1/2 tsp dried basil, red pepper flakes, 1 (24-ounce) jar spaghetti sauce (any you prefer), 1/2 cup heavy cream, salt & pepper, 1 pound angel hair pasta.

Directions:

  1. Heat olive oil in large saucepan over medium heat.
  2. Add onion and cook for 3 minutes.
  3. Add garlic, basil and red pepper flakes. Cook 1 minute.
  4. Add spaghetti sauce, heavy cream, salt and pepper. Simmer for 10 minutes, or until thickened to your liking.
  5. Cook pasta in salted water. Drain and mix together with sauce!

6. One Pot Chicken Parmesan Pasta

Total Time: 30 minutes
Yields: 6 servings

Ingredients: 2 -3 boneless chicken breasts (diced), 1 tsp Italian seasoning, 1/2 tsp garlic powder, 1 medium yellow onion (diced), 3 minced garlic cloves, 16 oz Rigatoni pasta, 24 oz jar of any marinara sauce, 1 cup mozarella cheese, salt and pepper, fresh parsley.

Directions:

  1. Using a large pot or skillet, add a drizzle of olive oil and heat over medium-high heat.
  2. Add chicken. Season with salt, pepper, Italian seasoning and garlic powder. Cook for 5 mins until chicken is cooked. Remove to a plate.
  3. Add onion and garlic to the pot and cook for 2-3 mins (until soft).
  4. Pour in marinara sauce, fill up jar with water and add to pot. Bring to boil and reduce to simmer.
  5. Add chicken and pasta, stir and then cover to cook for 10 – 15mins.
  6. Stir in Parmesan cheese and 1/4 cup of mozzarella cheese.
  7. Sprinkle remaining cheese on top and cook for another 2-3 minutes.
  8. Top with additional Italian seasoning and garnish with parsley or basil!

7. Linguine with Lemon & Tomatoes

Total Time: 35 minutes
Yield: 2 servings

Ingredients: 1 cup Roasted Tomatoes, 4 thin lemon slices, 1 tbsp olive oil, 1 minced garlic clove, 1 tbsp lemon juice, 6 oz linguine, 1 1/2 cup arugula, 1 tbsp thyme, 3 oz mozarella (torn), 1/4 cup toasted pine nuts, 1/2 cup fresh basil, salt and pepper.

Directions:

  1. Preheat oven to 350F and line a small baking sheet with parchment paper.
  2. Place lemon slices on the baking sheet. Drizzle olive oil and sprinkle with salt.
  3. Roast for 15 – 20 mins. Finely mince lemons and set aside.
  4. In a medium-sized (cold) pot, combine olive oil, garlic, lemon juice and 1/4 tsp sea salt.
  5. Prepare pasta according to package, cooking until al dente.
  6. Reserve 1/4 cup of pasta water.
  7. Combine hot pasta into the pot, with reserved pasta water, the arugula and toss.
  8. Add the thyme, tomatoes, lemons and toss again.
  9. Top with mozarella, pine nuts and basil.
  10. Toss one more time and season to taste and serve!

8. Linguine Pasta Vongole

Total Time: 40 mins
Yields: 4 servings

Ingredients: 320 – 400g of linguine, 800g fresh clams (200g per person), 3-5 garlic cloves (chopped), 1 red chilli pepper or dried chilli flakes, 4-5 tbsp olive oil, fresh chopped parsley, salt to taste, 1/2 glass dry white wine.

Directions: 

  1. Chopped garlic and parsley finely. If using fresh chilli, chop finely too.
  2. Wash clams in cold water and remove any broken shells.
  3. Bring a pot of water to boil and add in pasta to cook.
  4. While waiting for pasta to cook, add clams into a deep frying pan and cook covered over medium to high heat, until they open (5 minutes).
  5. Allow clams to cool and de-shell most clams, keeping some intact.
  6. Keep the liquid from pan after cooking clams.
  7. Heat half the olive oil in frying pan or skillet.
  8. Add garlic and peppers. Once garlic start to soften, add in clams (both with shell and without) and its reserved liquids. Cook a few minutes.
  9. Then, add white wine and cook until alcohol evaporates.
  10. Finally, add parsley and rest of olive oil. Cook for another 3-5mins and turn off heat.
  11. Add cooked pasta to pan with cooked clams.
  12. Mix everything together and serve immediately with chopped parsley!

9. Ultimate Spaghetti Carbonara

Total Time: 30 minutes
Yiled: 4-6 servings

Ingredients: 1 tbsp olive oil or unsalted butter, 1/2 pound bacon or pancetta (diced), 1-2 garlic cloves minced, 3-4 whole eggs, 1 cup grated Parmesan or pecorino cheese, 1 pound spaghetti, salt and black pepper.

Directions:

  1. Put a large pot of salted water to boil.
  2. While water is boiling, heat olive oil in a large pan over medium heat.
  3. Add bacon and cook slowly until crispy.
  4. Add garlic and cook for another minute. Turn off heat and set garlic and bacon aside in a large bowl.
  5. In a bowl, beat the eggs and mix in half the cheese.
  6. Once water is boiling, add pasta.
  7. Use tongs to remove pasta straight from the water into bacon and garlic bowl quickly (to retain the heat).
  8. Reserve some pasta water.
  9. Toss everything to combine, allowing the pasta to cool enough so that the eggs don’t curdle when you mix.
  10. Add the beaten eggs with cheese and toss quickly to combine.
  11. Add salt to taste and some pasta water to keep it from drying out.
  12. Serve immediately with rest of the parmesan and black pepper!

10. Creamy Roasted Red Pepper and Sun Dried Tomato Pasta

Total Time: 15 minutes
Yield: 4 servings

Ingredients: 8 ounces bucatini, 1/2 pack roasted red pepper from a jar (about one pepper), 1/4 cup loosely packed drained sun-dried tomato in oil (about two), 1 garlic clove, 4 tbsp unsalted butter, 1 cup half and half, 1/2 tsp kosher slat (or regular salt), 1/2 grated Parmesan cheese.

Directions:

  1. Prepare pasta according to package until al dente.
  2. Place the roasted red pepper, sun-dried tomato and garlic in a blender or food processor. Pulse until pureed.
  3. If needed, drizzle in a tsp of oil from jar of sun-dried tomatoes.
  4. Place butter, half and half and salt in a skillet set over medium heat.
  5. Once butter is melted, add red pepper and tomato mixture.
  6. Continue cooking, stirring frequently until sauce is thickened (5 mins).
  7. Turn the heat down to low and add cooked noodles and parmesan cheese to pan.
  8. Toss well and add salt & pepper as desired!
