Rendang Ayam Pedas: An Iconic Dish For An Ultimate Raya Feast At Home (Using Anchor Extra Yield Cooking Cream)

Ingredients:

Rendang Paste

  • 300g sliced red onion
  • 80g sliced garlic
  • 80g sliced ginger
  • 8 stalks sliced lemongrass
  • 40g sliced galangal

Other Ingredients

  • 80g dried chilli paste (don’t remove the chilli seeds if you want it to be spicier)
  • 1 piece turmeric leaf
  • 1.5kg pre-cut whole chicken (cut to 12 pieces)
  • 250ml Anchor Extra Yield Cooking Cream
  • 300ml water
  • 2 tablespoon coconut kerisik
  • 2 pieces fresh lime leaves
  • 2 pieces dried tamarind slices
  • Salt (to taste)
  • Coarse black pepper (to taste)
  • 1 piece fresh turmeric leaves (for garnish)

Step 1: To make the rendang paste, blend sliced red onion, garlic, ginger, lemongrass and galangal until fine.

Step 2: Pour the blended rendang paste into a large pot together with dried chilli paste, chicken, Anchor Extra Yield Cooking Cream, water, kerisik, turmeric leaves, lime leaves and dried tamarind slices.

Step 3: Cook using medium heat for around 50 minutes until the chicken is cooked and tender.

Step 4: Season with salt and coarse black pepper to taste.

Step 5: Just before turning off the heat, add in slices of fresh turmeric leaves to serve.
