The U.S. is now slowly phasing out open fire cooking methods as many cities gradually stop the usage of gas, including gas stoves. Chinese Restaurants In The United States Strongly Resist The Abandonment Of Gas Stoves
Some Chinese chefs in the States point out that electric stoves can never replace gas stoves. They said that to replace open fire with electric stoves is a misunderstanding of the art of cooking. According to the ‘Wall Street Journal’, Berkeley, California is the first city to prevent new buildings from connecting to natural gas in 2019. Some Chinese chefs also mention that open fire cooking makes Chinese cuisine more flavorful and electric-stove cooking cannot replicate the same flavours.
The Gas Consumption Across Homes And Restaurants
Many restaurants and households in the States use gas-based heaters, water heaters, ovens, and stoves. According to the Environmental Protection Agency (EPA) in 2019, businesses and households that consume fossil fuel amount up to approximately 13% of annual carbon emissions. But, the conversion of buildings to run on electricity in order to reduce carbon emissions poses a threat to the natural gas industry.
American Gas Association And Other Gas Companies Defend Open Fire Cooking
In addition, there have been large investments from organisations such as The American Gas Association and the natural gas companies that are ongoing. These organisations are also hiring Internet celebrities to promote gas-cooking on Instagram, inviting professional chefs to share recipes and increase preference for cooking with gas stoves.
