Located in SS15, the newly opened Ambesten Noodles serves homemade noodle soup bases and thick, springy noodles that exudes a comforting flavour that makes us feel like we’re eating at home. From bursting meatballs, homemade mix balls and dumplings – Ambesten has a large variety of topping choices to eat with your noodles.

Ambesten Noodles Offers Three Different Types Of Noodle Bases And Two Types Of Noodles

At Ambesten Noodles, you get to select three types of noodle bases: Superior Tasty Soup (anchovy-pork broth), Ma La Soup (spicy-numbing) and Dry (dark house-blend sauce); all of which are expertly made in-house. Ambesten also makes their noodles fresh every single day; you get to choose from two types of noodles: Jiu Chang Noodle and Tear Noodles.

The Noodles At Ambesten Are Customizable To Your Preference

There are many toppings and add-ons available here that you can mix and match to suit your preference. If you want some guidance, here are some recommendations by the owner:

1. Homemade Mix Ball Jiu Chang Noodles (Superior Tasty Soup)

The Homemade Mix Ball Noodle comes with fried balls of a pork and fish paste mixture, alongside their signature Jiu Chang noodles in a separate bowl. The Mix Balls are fried crispy on the outside, and juicy on the inside.

2. Minced Meat Jiu Chang Noodles With Pork Belly (Dry)

The Minced Meat Noodles is best eaten with their special dry noodle base. When mixed together, this salty and a tad sweet homemade base coats the noodles with an intensely satisfying flavour that pairs perfectly with the minced pork meat. Pork Belly is added on here for extra goodness.

3. Bursting Ball Jiu Chang Noodles (Superior Tasty Soup)

The Bursting Ball is great for someone that likes a little fun with their food. A pork ball enclosing a minced pork meat filling, this ball will give way to flavourful juices as your teeth sinks in.

4. Dumpling Jiu Chang Noodle (Ma La Soup)

The Dumplings Noodles served here at Ambesten come with a generous amount of silky homemade pork meat dumplings. These dumplings go very well with the subtle spice and numbing-ness of the Ma La soup.

5. Fu Zhou Ball Tear Noodles (Superior Tasty Soup)

The Fu Zhou Ball is made with a fish ball filled with minced pork meat. For something different, you can try choosing the Tear Noodles to go along with this. Manually torn with hands, the tear noodles present a nice, glossy feel in the mouth.

6. Seafood Mini Hotpot

The Mini Seafood Hotpot comes with prawns, sliced fish, Chinese cabbage, carrot, shiitake mushrooms, tofu and enoki mushrooms. The broth used in this hotpot is the Superior Tasty Soup – same as the one used with the noodles. When simmered with the seafood, the broth takes on a whole new flavour that is perfect for seafood lovers.

7. Tomato Slice Fish Rice

The Tomato Slice Fish rice dish comes with crispy fried fish fillets, a folded omelette and sliced tomatoes drenched in their homemade tomato sauce. Served with rice and a sunny fried egg.

8. Crispy Cereal Chicken

The Crispy Chicken Cereal comes with tender chicken cubes, cooked in a cereal that resembles closely to Nestum, curry leaves and chopped chillies. Served with rice and a sunny fried egg.
