Yes, we’re very much aware that fast-food joints are nothing new. We’ve written hundreds of articles on them, as well as hundreds of videos on them. Sometimes, your experiences start to even blur together until you’re not even sure how different the last fried-chicken-place was from the current one you’re dining at. However, as much as Nomms sells all the fast-food you’re probably accustomed to, they do it differently in a way that makes their chickens oh so juicy and fresh. How? Well, that’s what this article is about!

Let’s Talk About Pressure-Frying
Technique — it’s half the work of any masterpiece out there, be it in culinary arts or in public speeches. At Nomms, they got this part figured out almost perfectly, right down to every crisp and crust on their brown, crunchy fried chicken!
So… what is it exactly they do? I mean, yes, it’s pretty obvious from the title of this section, but just… Let me have my fun, okay?
Pressure-frying! Submerged in cooking oil, their fresh-off-the-market chicken is put under air-tight conditions in a pressure-fryer. Basically, it’s deep-frying, with the vital difference in that the product being fried is sealed from the outside world, which allows for pressure to build up on the inside.
“Why you so pressure wan?” Well, it’s because of a few things:
Fun Fact 1: The boiling point of water increases as atmospheric pressure increases. (Something to do with vapour pressure, but that’s more advanced stuff and less of a fun-fact for most. High-five if you know what I’m talking about! ??)
Fun Fact 2: With a higher boiling point, water doesn’t boil and evaporate as quickly. That means that moisture in meats can hold more heat energy before evaporating.
Fun Fact 3: (In layman terms) With more heat energy held in the moisture in meats, the meats can cook faster, and cook more evenly with the help of heated moisture deep in the meats. It can be otherwise unevenly cooked, as the moisture at the surface of the meats do not get a chance to transfer their heat energy to the moisture deep in the meats. This leaves you with over-cooked surface meats, yet under-cooked on the inside.
How does it improve my experience?
What about the after-effects? How does this impact the test-results from your food-chamber? Well, as I explained earlier, through pressure-frying, moisture in meats gain a higher boiling point (which means that they don’t evaporate as easily). That results in more moisture being retained in the meats. What does that imply? That’s right! NATURALLY MORE JUICY CHICKEN MEAT! Bye-bye tough and dry chicken breasts!

Test results from our food-chambers? With everything cooked only after you order (no ‘keep warm’ nonsense), it came out overwhelmingly positive!
Chicken Choices Original; Spicy; Flavour of the Month
Their chicken choices comes in three different variants: original, spicy, and ‘flavour of the month’. All equally crunchy, equally juicy, and equally a must-try! With flakes of slightly oily crumbs off the surface of the fried chicken skin, each bite only made you hungrier for the next!
Hot & Spicy at Nooms is actually hot and spicy. Not overwhelmingly so, but certainly not something to take lightly for any who isn’t a spicy-veteran!
Every three months, they’ll have a change in their ‘flavour of the month’ to spice things up! Why, however, is it called flavour of the month if it’s for the length of three months? Beats me. All I know is that for this month, their salted egg chicken is one of the best fried chickens present in the market! Slightly powdery on the outside and oh-so juicy on the inside, the explosion of awesome flavours and textures is a promise KL Foodie will make!
Double Trouble (Original/ Spicy)
Yes, Nomms has that burger that everyone loves — all meat, no bread! Their ‘Double Trouble’ comes in two different variants — Original, and Spicy. The Original is stacked first with a fillet of original fried chicken, followed lettuce, cheese sauce, hash brown, more cheese sauce, and topped off with another fillet of original fried chicken!
How about Spicy? Instead of having a fillet of original fried chicken and cheese sauce, they replace those with spicy fried chicken and curry mayo. Again, their Hot & Spicy IS ACTUALLY HOT AND SPICY! I was sweating quite a bit as I devoured my way through their burgers, but it each bite was just as worth it as the last!
Still believe burgers must come with some form of bread? Don’t worry! They do serve the commonly-found, yet even-more-scrumptious ‘Fried Chicken Burger’, as well as ‘Fried Chicken Paratha’ which is wrapped in… you guessed it, crispy paratha!
