At Seed, guests can indulge in an authentic and laid-back dining experience, where French and Japanese culinary techniques are harmoniously blended to create dishes bursting with flavour and innovation. The menu showcases a fusion of traditional fare with a modern twist, meticulously crafted using the freshest ingredients available.

Leading the culinary team at Seed is Chef Joshua Ho, a highly skilled and experienced chef from Whitegrass restaurant in Singapore. Chef Joshua’s impressive culinary journey includes stints at renowned establishments such as Esquina, Caffe B, and Tamago En, before joining Whitegrass. As the head chef of Seed by Whitegrass, Chef Joshua continues to embody the passion of Whitegrass, offering classic dishes with a modern twist and elegant plating, showcasing the very best of French-Japanese cuisine in a casual dining setting.

One of the standout dishes on the menu is the signature Amadai with Crispy Skin, Romanesco, and Beurre Meuniere. Amadai, also known as tilefish, is prepared using the meticulous oil bath method, resulting in an impeccably crispy skin that enhances the overall dining experience. This technique elevates the texture and flavour of the fish, creating a harmonious blend of tenderness and crunch in every delectable bite.
