Apam Balik Recipe: Make This Easy & Delicious Malaysian-Style Peanut Pancake At Home

Malaysian-Style Apam Balik Recipe (Peanut Pancake)

Batter: 2 cup all purpose flour, 2.5 tsp baking powder, 0.5 tsp baking soda, salt, 1 egg, 0.25 cup sugar, 1.5 cup water, 2 tbsp melted butter.

Toppings: sugar, peanut powder, cream corn and butter.

Step 1: In a bowl, mix all purpose flour, baking powder, baking soda and a pinch of salt together. Then sieve the mixture so that the texture is powdery fine.

Step 2: In another bowl, whisk the egg and sugar until it foams a little bit.

Step 3: After whisking, add water and flour mixture into the bowl and mix again.

Step 4: Mix in the melted butter, and then let it rest for 1 hour.

Step 5: Heat up a non-stick pan on medium-low heat and add in the batter to your desired size. Let it cook until bubbles appear in the batter.

Step 6: Once the skin underneath is golden brown (check with spatula), add in cream corn, sugar and peanut powder (depending on your taste).

Step 7: Carefully fold it into half and plate it. The batter in the middle is not supposed to be fully cooked.

Step 8: Cut it into triangles and it’s ready to be served. There should be a honeycomb-like texture in the batter.
